Good article! I’ve actually been trying to cut the water off when brushing and have gotten pretty consistent with it – of course, living in Southern California – which is mostly desert, in spite of MGM, etc. – I grew up being reminded, “That’s the Colorado River going down the drain!”

Seasonings depend on personal taste. Olive oil, garlic, and pepper are popular. Try different herbs, one or two at a time, to find your favorite. Thanks so much for your comment and question, Laura. I don’t season fresh beets, but I would season leaves.

Thanks for sharing! I LOVE pickled beets but have never tried cooking them. Thanks to you I am going to, also never knew you could eat the greens – now I’m gonna have to saute some do you add any seasoning or herbs?

Beets are also wonderful baked in the oven and topped with butter or salad dressing!
